Big negative the Shimano shifters need to pull 1.5 mm of cable per shift where as Sram only needs to pull 1mm.

On your seat post there is a stamp that will be in mm. (ex. 32.8) this is stamped right where the max insert line is.

Yes The Ultegra would be an upgrade from any crank that is 3 to 4 years old. Your derailleurs should work just fine. depending on the current gearing up front. You might have to tweak the F Der.a bit.
